If I connect my laptop directly to the phone to access my internet without using modem.
would i be able to access internet? That would be considered dial up right?
How do i put the settings on my laptop for that?

To use dial up, you would have to first have a dial up provider such as Netzero. You will also need a modem for your laptop. Some models might have one built in, however many new models no longer include a dial up modem. In that case, you would have to purchase a USB dial up modem.
