Level 3 (transparent proxies):

server knows your real IP address and it knows that you're using a proxy



Level 2 (anonymous proxies):

server DOES NOT know your real IP address, but it knows that you're hiding behind a proxy.



Level 1 (elite proxies):

server DOES NOT know your real IP address and it has no idea that you're using a proxy. You're completely hidden.

Not sure about L1/L2/L3.



HTTP proxies proxy only HTTP, maybe HTTPS traffic. "Squid" is a good example. Instead of connecting direct to a webserver and issuing, say, "GET /index.html HTTP/1.1" a browser connects to the proxy server and issues "GET http://www.example.com/index.html HTTP/1.1" and the proxy then gets the page from example.com and returns it to the browser. Often, it adds extra headers to indicate that it is fetching on behalf of a client process and that the answer came via a proxy. It is usually configured to cache results for faster reuse by other clients.



SOCKS as I recall will proxy other protocols as well, not just HTTP.
